I teach courses in Health and Nutrition Research methods, Lifecycle Nutrition, and Global Food and Nutrition Perspectives. My research is focused on maternal and child nutrition related to micronutrient nutrition, oral health, and the applications of technology.
1. How do you use AI in your teaching, and what are your favorite resources?
For the foundations in a research class, I refer to ChatGPT as a resource for brainstorming ideas to get started with identifying research gaps and crafting a research question.

3. What do you tell students about using AI?
For the foundations in a research class, I refer to ChatGPT as a resource for brainstorming ideas but insist on critical review and revision of content and appropriate referring to original sources.
4. What challenges, if any, have you had with AI in your courses?
Despite class discussions, some students need to realize that using AI-generated content unedited and not providing appropriate references is plagiarism. Many of them do not know such content could easily be identified by the current checker software like Turnitin.
5. How do you think AI has or will impact your domain?
AI provides an excellent opportunity to facilitate research, especially in health care, but also helps with student learning outcomes. I am learning more opportunities to help students learn with AI rather than solely relying on it.
