Alpha Chi Sigma Liquid Nitrogen Ice Cream
This exhibit will show the process of making ice cream with liquid nitrogen, followed by the chance to have a sample of the ice cream. Alpha Chi Sigma has been putting on this exhibit for a number of years as we love the opportunity to share with the community a science experiment that incorporates food and an understanding of how that food is made. As an exhibitor walks through the exhibit, we explain that the nitrogen ice cream is safe to eat as the air around us is 78% nitrogen. We also explain how the ice cream is made; heavy cream, sugar and vanilla extract are mixed together before adding liquid nitrogen. The liquid nitrogen freezes the mixture faster than normal ice cream, making the nitrogen ice cream smoother than normal ice cream.
