Altay and Lewis publish book chapter on starch rheology

Bilge Altay, assistant professor in the Department of Packaging and Graphic Media Science, and Christopher Lewis, associate professor in the Department of Manufacturing and Mechanical Engineering Technology, published a book chapter on the rheological characterization of starches.
