John Serafim, a third-year mechanical engineering student, starts the process of tapping a maple tree using a drill as part of the Maple Syrup and our Environment course. “We have such amazing resources on this campus. I just want students to find a way to connect with the outdoors and appreciate the balance we need to find with nature,” said Enid Cardinal, senior advisor to the president for strategic planning and sustainability, and a course instructor.
