Students presented F&B simulation projects to industry professionals

Friday, 6th of December was another exciting day at RIT Croatia's Dubrovnik campus. As a part of the Food & Beverage Management class, taught by Prof. Domagoj Nikolić, our sophomore students gave presentations of their semester long projects to industry professionals and RIT Croatia Alumni, Mr. Ivor Vlašić, F&B Sales and Cross-selling Manager at Adriatic Luxury Hotels and Mr. Branimir Boras, Assistant Food Beverage Manager at Sun Gardens Dubrovnik.

Students presented the standard recipes for four menus (Appetizers, Soups and Salads, Mains and Desserts) which they had to refine and upgrade through menu engineering mechanisms employing variable strategies for different profit categories. The capstone of the project was a special online simulation at which they had to tailor a seven-item menu out of 12 available dishes and run a Menu Engineering over a longer period with the goal of maximizing revenue from the menu items competing with each other.

At the end of the presentations, our guests were thrilled with the richness of competencies and level of knowledge shown by the students, which, without this specific teaching focus and method, would take years and years to develop in a real work environment.
